Anzac biscuits are a no-brainer for this weekend's baking project, but what if you're not an oat enthusiast or prefer a chocolatey chew? We road-test the best skookies, shortbreads and ice-cream sandwiches so you won't be complaining about how the cookie crumbles.

Die-hard traditionalists may object, but these palm sugar Anzac bikkies offer a wonderful twist on the original. Excelling in the crunchy – rather than chewy – department, these sweet treats are rich, caramely and rather addictive. Be warned.

Don’t let the name put you off, these Dutch coconut rocks won’t break any teeth on our watch. Popular in the Netherlands during winter, the chewy meringues carry a pleasant hint of lemon and ginger.

Put your hands up if you’ve ever made mint slice? No one? Well, we’re pleased to inform you this much-loved packet biscuit is delightfully simple to make at home. Pairing peppermint-flavoured fondant with a rich cookie and chocolate coating, the recipe screams “Dunk me into tea!” so do it already.

Okay, so the pumpkin ice-cream mightn’t be super pumpkin-y, but it is entirely delicious, particularly when sandwiched between choc chip cookies. Richer and nuttier than your average bikkie, the wholemeal recipe from Linda Xiao is wonderful sans ice-cream if you’re digging a simple sweet.

5. Gheet on it

Cumin, black pepper and ghee might sound like the makings of a magical curry, but these Indian ingredients are also superb in biscuit form. Ticking both sweet and salty boxes, these semolina shortbreads come from Journey Kitchen blogger, Kulsum Kunwa.

6. You put your right hand in

If you prefer more outlandish displays of Australian spirit, we recommend this hokey-pokey ice-cream sandwich. Layering honeycomb and caramel between chewy Anzac bikkies, it’s the best slab you’ll see all week.

And finally, for the mother of all biscuits, we hereby introduce you to the peanut butter choc-chip skookie. Cooked in a cast-iron skillet (skillet-cookie, get it?), this supersized American specialty is best devoured with a glass of milk and your BFF.
