How to gnocch-it out of the park every night of the week

From a classic tomato and basil combo to pumpkin, marsala and sage, who knew soft, pillowy potatoes could be a thing of such great beauty.

There is always a special place for gnocchi in everyone's kitchen. The Seasonal Cook O Tama Carey says, "Like most things in life, once you get the hang of it, gnocchi are relatively quick and simple to make. The trick is to have the right type of potatoes cooked properly." Get her recipe here.

1. Tomato & basil baby!

Poh Ling Yeow shares her most brilliant and very versatile tomato sauce recipe. Pour over pasta, braise vegies in it, use as a pizza base or between layers of a vegie lasagna or here, with her gnocchi, tomato sauce and basil bowl.

2. Pretty and purple!

Luca Ciano uses purple-fleshed potatoes to lend a beautiful colour to these gnocchi, which he serves up with a creamy parmesan sauce. Ciano says making gnocchi takes him back to where it all began for him in the kitchen, cooking with his nonna.

3. Italy meets Australia

The Italian classic gets an Indigenous Australian ingredient twist in this recipe from Rebecca Sullivan and Damien Coulthard's book, Warndu Mai, with warrigal greens and sea parsley in the gnocchi and cinnamon myrtle in the buttery sauce.

4. Not a northern Italian nonna?

Quite different from the traditional potato gnocchi that many are used to, this Roman-style recipe is made from semolina flour and is considerably easier to make if one is not as skilled as a northern Italian nonna at rolling gnocchi off the tines of a fork. Did we mention the cheesy topping?

5. Pump it with potato AND pumpkin

This Jap pumpkin gnocchi with marsala, capers and sage is a great example of savoury and earthy working wonders and comes courtesy of Italian guru and The Seasonal Cook O Tama Carey.

6. What would mamma do?

Courtesy of the Two Greedy Italians, this simple but truly delicious dish is one of their favourite recipes from their hometown of Minori. These little ricotta dumplings are served with tomato and basil sauce, minus any dough rolling and potato prep, making it a winning weeknight meal.

7. A little wild

Swimming in a wild mushroom sauce, this gnocchi dish is light, pillowy and rich - count us in.

8. Massive soft spot

Trade your potato with some ricotta in this soft and juicy recipe that really takes your wilted spinach to a very delicious place.

9. Home is where the heart-y is

Homemade gnocchi, homemade bolognese - you'll be pretty popular with this dish that has comfort food written all over it!

10. Bake your sauce

Homemade gnocchi with fragrant, chunky, roasted tomatoes? Sounds good to us! A mix of truss and cherry tomatoes (use a mix of colours for extra eye appeal at the end!) are baked with onion, garlic, rosemary and basil, creating a chunky sauce for your homemade potato bundles.
