Air fryer spice bag

When fried carbs call, try this spiced-up quick fix. To make the Sichuan seasoning, you'll just need to grind together Sichuan peppercorns, Korean chilli powder, toasted sesame seeds and a little salt and sugar.

Ingredients

  • 8 frozen chicken nuggets
  • 3 cups frozen French fries
  • 1 tbsp vegetable oil
  • 1 garlic clove, roughly chopped
  • ½ red onion, thinly sliced
  • ½ red capsicum, thinly sliced
  • 1 large green chilli, thinly sliced
Sichuan seasoning

(Makes extra)
  • 1 tbsp Sichuan peppercorns
  • ¼ tsp salt
  • 1 tbsp mild Korean chilli powder
  • ¼ tsp toasted sesame seeds
  • ¼ tsp sugar

Instructions

  1. For the Sichuan seasoning, place the Sichuan peppercorns and salt in a dry frying pan and toast for 1-2 minutes or until fragrant. Grind to a coarse powder with a mortar and pestle, then combine with the remaining ingredients.
  2. Cook the chicken nuggets and French fries in an air fryer or oven according to the packet directions.
  3. Heat a wok over high heat, then add the oil. Fry the garlic, onion, capsicum and chilli for about 4 minutes or until softened and lightly browned. Add the nuggets and French fries and season well with the Sichuan seasoning. Toss to combine well, then serve immediately in a brown paper bag.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
