Ingredients

  • 2 chicken breast fillets
  • ¼ cup soft goats cheese
  • 2 tbsp pesto
  • sea salt and black pepper, to season
  • 4 slices streaky bacon
  • olive oil, for drizzling
To serve
  • steamed green beans
  • grape or cherry tomatoes
Resting time: 10 minutes

Instructions

  1. Preheat the oven to 220˚C (fan-forced 200˚C).
  2. Gently pound the chicken breasts between two pieces of plastic wrap until about 1.5 cm-thick.
  3. Remove the top piece of plastic wrap, then spread the goats cheese and pesto over the top of each breast. Season with black pepper.
  4. Roll the chicken breasts up lengthways, then wrap in streaky bacon, using toothpicks to secure.
  5. Heat a good drizzle of oil in a small heavy-based, oven-proof frying pan. Add the chicken and cook, without turning, for 3 minutes, then brown on all sides. Transfer the pan to the oven and bake for 15 minutes. Remove from the oven and rest for 10 minutes.
  6. Thickly slice the chicken, then serve with steamed beans and cherry tomatoes.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
