Ingredients

  • 95 g (1 cup) rolled oats
  • 90 g (1 cup) desiccated coconut
  • 35 g (½ cup) wheatgerm
  • 75 g (½ cup) sesame seeds
  • 75 g (½ cup) sunflower seeds
  • 75 g (½ cup) pumpkin seeds
  • 170 g (1 cup) sultanas
  • 125 g butter
  • 125 g (½ cup) honey
  • 60 g (⅓ cup) brown sugar
Chilling/freezing time: 2 – 3 hrs

Instructions

  1. Grease and line a 16 cm x 28 cm x 3 cm deep cake tin with baking paper.
  2. Place the oats, coconut, wheatgerm, sesame seeds, sunflower seeds and pumpkin seeds in frying pan over medium heat and cook, stirring continuously for 8 – 10 minutes or until golden. Transfer to a large bowl to cool, then stir in the sultanas.
  3. Place the butter, honey and sugar in a saucepan over medium heat and stir for 3 – 4 minutes or until the sugar dissolves. Reduce the heat to low and simmer, without stirring for 7 minutes.
  4. Add the butter mixture to the dry ingredients and mix well. Spoon into the lined tin and press down firmly, then refrigerate for 2 – 3 hours or until firm. Cut into slices to serve.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
