Pinoy Christmas favourites: Snowball cookies

Snow doesn't fall in the Philippines, and Christmas in Australia means thongs and singlets; but you can still have your own version of a White Christmas with these crumbly treats.

Here's an easy recipe for these rounded, crumbly, pecan-filled shortbread cookies rolled in icing sugar:

Ingredients:

240 gms butter

2 1/4 cups all-purpose flour

1 tsp vanilla

1/4 tsp salt

Pecans or walnuts, chopped

1/2 cup icing sugar for cookie

Icing sugar for coating

Procedure:

1. Preheat your oven to 175 degrees Celsius.

2. Using an electric mixer, cream butter, 1/2 cup icing sugar and vanilla together. 

3. Sift in flour and salt. Mix well.

4. Add in nuts. Mix well.

5. Line a cookie tray with parchment paper, or utilise a silicone baking mat if you have one.

6. Using a spoon, scoop batter and form into balls with your hands. Place the rounded batter on the tray.

7. Bake for 10-15 minutes or until cookies set and before they turn golden brown.

8. Cool the cookies for 2 minutes, and roll in icing sugar.
